Italian cuisine has a special place in my heart. When my family and I immigrated to Canada, my father’s first job was working in the kitchen of an Italian restaurant.

Every piece of Italian cuisine seemed native to me in the form of a colorful Curry set. Needless to say, I was very happy to dive into my first PORTA order.

But with PORTA, I can spend less time stirring and more time enjoying my dishes and moments: the dish is prepared in less than 15 minutes, very easy to prepare and served for two.

Recently, PORTA has released a line of risottos (rice lovers, unite!) made from premium seasonal ingredients, and it’s safe to say that I’m obsessed with them.

Risotto all PORTA, a traditional Northern Italian dish from Piedmont, is offered at $7.50 per serving and is made from Aquerello rice imported from Italy — a chef’s favorite dish that requires less stirring and has a shorter cooking time — and is decorated in a seasonal theme with porcini mushrooms, roasted pumpkin and saffron.

I was surprised by the amount of umami packed in Bassano. This rich and creamy risotto uses porcini mushrooms that preserve the texture of the meat, making dinner an unforgettable experience, considering it took me less than 15 minutes to whisk them together.

I like how simple and easy it is to evaluate this dish. Pair it with a fine white wine of your choice, and thank you later!

Mantova zucchini risotto

It is not every day that seasonal ingredients are effectively used in convenient catering establishments ready for cooking.

As a big fan of products that go hand in hand with autumn and winter, this zucchini risotto with nuts is everything I need, and even more for a quick dinner.

I enjoy the note of sweetness that pumpkin gives to the dish, no less than the addition of texture. Although my family loves this dish with Chardonnay, I prefer to combine it with a good malbec. Choose your adventure!

Saffron is a unique spice, it gently balances on the border separating sweet and savory, and has an unmistakable aroma and aftertaste.

I was surprised and delighted by how much I managed to convey these qualities when I cooked this risotto and when I enjoyed it with my loved ones. Milan is a place where gold is combined with the beauty of Italian cuisine. Our couple? Crisp white wine or an amazing glass of Portuguese rosemary.

I also had the opportunity to try (and serve) classic cacio and pepe in Ostia Porto, Peppino — my delicious and favorite pizza with pepperoni smoke, Dolce Assorted — four packages of tiramisu, chocolate mousse, toffee Budina and panna cotta.

The Singaporean farm Sky Greens

Only 7% of the vegetables consumed locally in Singapore are currently grown locally; this problem inspired the creation of Sky Green Farms. (Another important factor was Singapore’s exorbitant real estate costs, which made vertical production the most economically viable method of producing locally.)

The farm produces several popular tropical vegetables in Malaysia, including Chinese cabbage, Kang Kong (also called “water spinach”), and several others.

The farm employs a distinctive A-frame system that rotates the produce to give it an even distribution of light.

Farmedhere in Chicago

Farmedhere, a self-described vertical farming pioneer in Chicago, is a great example of repurposing an old structure because it takes up 90,000 square feet of a former Chicago warehouse.

The facility has incorporated tilapia into an aquaponics system that currently provides 71 grocery stores and other suppliers in the greater Chicago area with salad greens, herbs, and dressing.

Farmedhere employs over 200 locals as part of its effort to support the regional economy.

Pennsylvania’s Scranton’s Green Spirit Farms

Since June 2013, Green Spirit has been cultivating and selling locally in Michigan. In the upcoming month or so, they intend to increase production in a structure in Scranton, Pennsylvania, according to president Milan Kluko.

The facility, which is 3.25 hectares in size and has a capacity to hold 17 million plants at a time, cost the company $27 million to build.

The converted industrial structure is slated to become the largest vertical farm in the world, with a full-capacity potential of 200 acres of farmland. If math isn’t your thing, that’s 29 times more than what a traditional farm could produce in the same space.

Water conservation appears to be a key focus of the farm going forward, as 98% less water per production unit is anticipated to be used. This appears to be motivated by drought conditions that have plagued U.S. agricultural land in recent years. Similar to Farmedhere, GSF will boost the regional economy by creating at least 101 jobs.

Vertical Farms by Nuvege

Japan’s vertical farming industry has flourished since the Fukushima nuclear disaster in 2011, which rendered a sizable portion of the country’s arable land radioactive.

Leading the charge is Nuvege Farms, which cultivates lettuce in 30,000 and 57,000 square feet of horizontal and vertical space, respectively.

One of the company’s main objectives is to feed children, and as commercial vertical farms continue to be developed, this goal may become more of a reality in Japan.
